Cheese cakes make for delicious dessert consisting of a topping made of soft, fresh cheese on a base made from biscuit, pastry or sponge. The topping is frequently sweetened with sugar and flavored or topped with fruit, nuts, fruit flavored drizzle and/or chocolate. The recipes are time-honored with evidence of honey-sweetened cakes dating back to ancient Greece.
Cheesecakes can be broadly categorized into two basic types - baked and unbaked. Each comes in a variety of styles determined by the region the recipe comes from. Cheesecake needs to bake slowly and evenly to prevent cracking. You, too, cake bake them as good, if not better than those you can buy from stores or restaurants.
Cheesecakes use mostly some form of cheese (often cream cheese, mascarpone, ricotta or the like), and have very little to no flour component. Although this may sometimes appear in the form of sweetened crust. Actually they are more like giant custard than a cake, and, as such, often have complicated baking directions designed to prevent them from cracking.
A well made cheesecake preserves a rich uniform texture. New York style cheesecakes are cream cheese mixtures baked without a water bath and are unique because the baking starts at a high temperature (that's quickly dropped down) producing a rich interior and light brown exterior.
