Christmas cakes are traditionally enjoyed during the holiday season. A Christmas cake may be light or dark, crumbly-moist to sticky-wet, spongy to heavy, leavened or unleavened, shaped round, square or oblong. Glazed with marzipan icing and dusted with icing sugar it truly brings out the fun of the season.

If it’s Christmas Eve you can cover the cake with nuts and cherries that would be a great option. All you need to do is brush the cake with sieved warmed apricot jam. Arrange halved walnuts, blanched almonds and glacé cherries over it, before coating again. Tie green or red and gold ribbon around and you have an attractively decorated cake to offer.
Traditional Christmas cakes are covered with marzipan. You will need to do this a few days before icing to allow the marzipan to dry out properly. If you try and ice it straightaway, the oils from the marzipan may seep into the icing. Never frost a cake that hasn’t cooled completely, or you risk having your creation melt.
