Coffee Cake is a small informal cake having a rich and full flavoured taste. They usually have a fruit or nut base. A coffee cake may either be a sponge cake made with coffee or has a coffee flavour or a cake served with coffee or eaten at breakfast. They differ from layer cakes not only in their appearance but also in what they contain.
Coffee Cake Recipe
Ingredients
170g Self-Raising flour
½ Teaspoon Baking powder
½ Teaspoon salt
142g Caster sugar
113g Soft margarine or butter
2 Eggs, size 2 or 3
1 tablespoon Instant coffee powder or granules dissolved in milk
3 tablespoons milk
56g Crushed walnuts
Recipe
Place all ingredients in large mixing bowl and beat thoroughly until you get a smooth mixture. Spread evenly into a greased 800g loaf tin. Bake for 30 minutes at 375°F (190°C) or gas mark 7, combination 190 and warm for 25 minutes. If using coffee granules, mix with a little milk to dissolve, then add to mixture as normal. If you are using 8 inch cake tin, increase the quantities by 50%. |
