Homemade Graduation Cake Recipe

Homemade Graduation Cake
Here is a simple and delicious recipe for a graduation cake. Make use of this recipe to bake the perfect graduation cake.

Ingredients
  • Cake Flour – 6 cups
  • Baking Powder – 2 tablespoon
  • Salt – 1 teaspoon
  • Egg whites – 10
  • White sugar – 4 cups
  • Shortening – 1½ cup
  • Milk – 2 cups
  • Vanilla extract – 6 teaspoon
  • Softened Butter – 1 cup
  • Confectioner’s sugar - 8 cups
Preparation

For the Cake:
  • Measure the flour and add baking powder and salt. Now sift this mixture.
  • Beat the egg whites until it becomes fluffy and once it does, add 1-cup sugar and beat until the egg whites and the sugar are mixed thoroughly.
  • Cream the shortening; add 2½ cups of white sugar and cream together until the mixture becomes light and fluffy.
  • Now gently stir in the flour and the milk.
  • Add the milk and flour in several batches of small quantities and smoothen out the mixture after every addition.
  • Now add 2 teaspoon of the vanilla extract and egg whites and mix the batter thoroughly.
  • Once the batter is ready, add it into two three-inch deep round pans (one with 10 inch diameter and the other 8 inch).
  • Line the bottom of the pans with baking paper.
  • Fill the pans with the batter. Bake the cakes over 175 degrees C.
  • Bake the 8-inch cake for about an hour and the 10 inch one for one hour and ten minutes.
  • After baking, take out the cakes on racks and cool them for around ten to fifteen minutes.
  • After the cakes have cooled down, loosen from sides of pans and turn out the cakes on the racks.
  • Now brush the brush cakes to remove any loose crumbs so that you have two plain and smooth round cakes, which are ready to be decorated with icing.
For the Frosting
  • Cream one-cup butter and add confectioners' sugar gradually.
  • Add the sugar slowly and keep on blending simultaneously.
  • Now mix four teaspoon of vanilla extract and half-teaspoon salt to the mixture.
  • Now gently add the milk and the remaining sugar and beat the mixture constantly.
  • Use colors of your choice for the frosting. Add a personalized Graduation day message to make the cake extra-special.
