Red Velvet Cake

This is a type of rich and sweet cake, having a dark red to bright red or red-brown colour. It is most popular in the Southern United States. These cakes have creamy rich frosting. The most typical frosting for a red velvet cake is a butter roux icing also known as a cooked flour frosting. Cream cheese butter cream frostings are also popular.

 Red Velvet Cake Recipe

Ingredients

Cake
1 1/2 cups sugar
1 stick butter, softened
2 eggs
3 bottles red food colour
2 level tablespoons cocoa
1 teaspoon vanilla flavouring
1 teaspoon baking soda
1 cup buttermilk
2 1/2 cups very finely sifted cake flour 

Frosting

1 cup water
1 cup sugar
3 heaping tablespoons regular white flour
2 sticks butter, softened
1/2 teaspoon almond flavouring
1 teaspoon vanilla flavouring

Cake Directions
Cream together butter and sugar.  Add eggs one at a time, beating well after each addition. Mix red food colouring and cocoa until cocoa is completely dissolved. Add to the above mixture. Add vanilla and almond flavouring, mix well. Mix baking soda and buttermilk. Mixing on low speed, add the flour and milk alternately, beginning and ending with flour.  Mix well but do not over beat to ensure a light fluffy cake.
Place into two floured and greased 9 inch round cake pans. Bake in preheated 350F oven for 25-30 minutes. Allow it to cool.

Frosting Directions
Blend into a small saucepan the 3 tablespoons of flour and the cup of water. Cook over medium heat, stirring constantly, until mixture resembles glue. Cool completely. Cream together 1 cup sugar, 2 sticks butter, 1 teaspoon vanilla, and 1/2 teaspoon almond flavouring. Add the flour mixture and beat at high speed until thoroughly mixed. Frost the cooled cake
